Ozzy Osbourne's Favorite Vegetarian Dish: Lentil Casserole
Wichitan Dennis Wyatt says today's rock stars appreciate good food more than they did 20 years ago.
So Wyatt, who helps cater concerts at the Kansas Coliseum and other venues, values their praise.
"It (cooking) is an art form, and everybody likes their art to be appreciated," he said.
Rocker Ozzy Osbourne had a representative ask Wyatt, who supervises food production for the Wichita school district, for this lentil casserole recipe, saying it was "the best vegetarian food he'd eaten."
The chicken dish takes its name from Wyatt's nickname in the kitchen.
4 boneless skinless chicken breasts (about 6 oz. each)
1 tablespoon seasoning salt
1 tablespoon granulated garlic
1 tablespoon adobo seasoning
1 teaspoon black pepper
1 avocado, sliced
4 slices turkey bacon
4 slices Pepper Jack cheese, about 1 oz. each
12 oz. bowtie pasta
1 bottle favorite marinara sauce
Mix together seasoning salt, garlic, adobo seasoning and black pepper. Coat chicken breasts with the mixture. Bake in a shallow pan at 350 degrees for 18 to 20 minutes, or until the internal temperate is 165 degrees.
Take pan out of oven and top chicken breasts with avocado, bacon and cheese slices. Return to oven for 5 minutes.
Meantime, cook pasta as directed on package and heat sauce. Top drained pasta with sauce and chicken and serve.
OZZY'S MEDITERRANEAN LENTILS
1 cup green lentils
1 cup yellow lentils
1 cup French lentils
3 quarts water
3 bay leaves
2 tablespoons thyme leaves
1 can (15 oz.) tomato sauce
1 can (15 oz.) crushed tomatoes
1 bay leaf
1 tablespoon oregano
2 tablespoons basil leaves
1 teaspoon thyme leaves
5 cloves garlic, crushed
Salt and pepper
1 cup cauliflower florets
˝cup broccoli florets
˝cup shredded carrots
1 cup finely diced red onion
˝cup shredded summer squash
4 oz. Italian cheese mixture (such as mozzarella, Parmesan and provolone)
4 oz. crumbled feta cheese
Put first six ingredients in a heavy pot and bring to a full boil. Turn heat down to medium and cook 20 minutes. Drain and set aside.
While lentils are cooking, put next eight ingredients in a heavy sauce pan, bring to a boil; turn down to medium-low and let simmer 45 minutes. Add cauliflower, broccoli, carrots, onion and squash during last 15 minutes of cooking.
Mix lentils and sauce mixture in a large baking dish and bake at 300 degrees for 30 minutes. Top with cheese and bake 10 more minutes. Remove from oven and let rise for 15 minutes before serving.
